Chicken Mushroom Alfredo

I love pasta but ever since I discovered spaghetti squash I’ve been obsessed and want to make all my favorite pasta dish with it. I normally make my own Alfredo Sauce but I was at the grocery store, Trader Joe’s to be specific and I was drawn to a pre-made mushroom Alfredo sauce so I decided to give it a try.

Trader Joe’s Mushroom Medley Alfredo Sauce

I decided on chicken tenders as my protein and added extra sliced white mushrooms but the sauce it self has a lot of mushroom already.

The recipe is super easy and fast to make, you can substitute the spaghetti squash with linguini, cook the pasta as specified in the package. If you decide on the spaghetti squash click on the link for my spaghetti square recipe.

Begin by cutting the chicken tenders in small pieces, cook the chicken in olive oil on medium heat for about 7 to 9 minutes, just add salt and pepper.

When the chicken is beginning to turn brown add about a cup of sliced white mushrooms and cook for another 3 minutes, you can skip the mushrooms if you want. Lower temperature to medium/low and dd the Alfredo sauce and let it cook for about 2 to 3 minutes.

Serve your chicken Alfredo over spaghetti squash or linguini and top it off with shaved parmesan cheese.
If you serve this dish over spaghetti squash and are using the shells of the squash pop them in the oven at 425 F for 10 minutes for the parmesan cheese to melt, it is delicious!

Ingredients

  • 1 lb chicken tenders or chicken breast

  • 1 tsp salt

  • 1/2 tsp fresh ground pepper

  • 1 container of Mushroom Medley Alfredo sauce from Trader Joe’s

  • 1 cup sliced white mushrooms (optional)

Directions

  • Cut the chicken is small pieces and cook in a large skillet with olive oil, salt and pepper for 7-8 minutes
  • Option to add slice mushrooms and cook for 2 minutes
  • Lower temperatures to medium low and add the Alfredo sauce, cook for 2-3 minutes and serve

Notes

  • Any leftovers you can keep in the refrigerator for 2 days, poultry leftovers are a little sensitive so try to eat it as soon as you can.

I hope you enjoy this super easy recipe, if you don’t have a Trader Joe’s near just grab a jar of Alfredo sauce from your local grocery store and add mushrooms to it.
