I’m not a big cookie person but sometimes you just want a really good warm cookie with your morning coffee or a little pick me up snack in the afternoon. This cookie is super easy to make and most of us already have the ingredients at home. I’ll be honest, this is the first time I made oatmeal cookies which in the past I really didn’t like them. I guess my taste of snacks have changed a little bit.
This cookie is super versatile, I like to add chocolate chips and walnuts to it but those ingredients are optional or can be substituted with raisins, cranberries, caramel chips and any other nut if you don’t want walnuts. For the purpose of this recipe I’ll be adding dark chocolate chips and walnuts.

Hand mixer

Baking Sheet(s)
Parchment paper (optional)
Spatula
Large Spoon or cookie scooper
This recipe will make about 24 medium size cookies
Chocolate Chip Oatmeal Cookies

1 cup butter, softened
1 cup packed light brown sugar
2 eggs, room temperature
2 tsp vanilla extract
1¼ cups all-purpose flour
1/2 tsp baking soda
1 tsp baking powder
1/4 tsp salt
3 cups quick-cooking oats
1 cup chopped walnuts (optional)
1 cup semisweet chocolate chips (optional)
Directions
- Preheat oven to 325F degrees
- In a large bowl, cream together with an electric mixer the butter and brown sugar, until smooth. Beat in eggs one at a time, then stir in vanilla. Combine the flour, baking soda, and salt; stir into the creamed mixture until just blended. Mix in the oats, walnuts, and chocolate chips
- Drop by heaping spoonfuls onto un-greased baking sheets
- Bake for 12 to 13 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely
Notes
- Oatmeal cookies will stay fresh in an airtight container for up to 5 days. Do not refrigerate the baked cookies.
I love to eat cookies warn so I would place them in the microwave for 15-20 seconds and they come out nice and gooey. These cookies are great complement to Vanilla Bean ice cream!
