I wanted to make a super easy breakfast that didn’t take much.

Ingredients
1 Ripe medium banana
1 egg
Directions
- Blend the banana and egg for about 30 – 45 seconds
- Warm up a griddle and spray it with oil or butter
- make small dollar size medallion pancakes and cook for about 1-2 minutes on each side
Notes
- Small medallion are easy to flip and fun bite size. Serve with a side of scramble eggs or bacon.
