This recipe is super simple and versatile, you can substitute the stuff with any meat you want or just make a sofrito with mushrooms and quinoa.
The recipe below is my take on a SouthWest egg roll I used to eat when we were living in California.
What you’ll need:
Medium size pan
Measuring cups and spoons
Rubber spoon
Knife and cutting board

1/2 lb ground beef, option to use ground turkey or chicken
3 large yellow or orange bell peppers cut in half long ways and seeds removed
1 tbsp cooking oil (olive oil, avocado oil or grape seed oil)
3 oz cream cheese
1/3 cup well drained corn kernels
1/3 cup well drained black beans (low sodium if possible)
1/4 cup chopped jalapeños (option to keep the seeds in for more heat)
1-2 tsp salt
1 tsp ground cumin
1/2 tsp ground pepper
1/2 chili powder
1/2 garlic powder
1/2 shredded mozzarella
Cooking spray
Directions
- Preheat air fryer at 350F
- On medium heat add the oil and the ground beef in the pan, cook for 4 to 5 minutes until meat is about 75 percent cooked. Make sure to crumble the meat as it cooks using a rubber spoon
- Add salt, cumin, pepper, chili powder and garlic. Stir all the spices in the meat and cook for about 2 minutes
- Add cream cheese, corn, jalapeños and black beans and stir until everything is fully incorporated
- Spray the cooking spray to the air fryer basket and set aside. Begin stuffing bell peppers with cooked meat and vegetables and place them in the air fryer basket.
- Air fry stuffed bell peppers for 10 minutes, then add shedded mozzarella to the top of the bell peppers and air fry for 3 more minutes until the cheese has melted and has become a little crispy
Notes
- Serve stuffed peppers with a side of quinoa, soup or salad with a side of sliced avocado
