Truffles are such an easy treat make, no cooking needed, and just a few ingredients make such a great treat for a special someone or maybe for yourself.
This super easy recipe only uses a few ingredients that can very easily be converted to a Keto or Paleo and they’re Gluten free treat.

I’ve been on Keto on and off for over a year. I really like the Keto lifestyle and to be honest it has helped me a lot, I have more energy when I’m in full ketosis and have less stomach issues. Even though Keto is now a lot more popular is a little hard to keep it up when traveling or even going out for dinner or just desserts. If you want to make this truffles Keto friendly just replace the maple syrup with monk fruit sweetener, same measurement as monk fruit is not as sweet as Splenda or even Swerve. if you like the last two sweeteners I just mentioned you might want to use just 1/3 cup instead of half a cup.
For chocolate chips use Lily’s Chocolate Chips, they just came out with a variety of chocolate chips including dark chocolate which in my opinion is the best. You can find Lily’s Chocolate Chips pretty much anywhere now. I normally get monk fruit sweetener and the chocolate chips through Thrivemarket.com because they have much better prices than the regular health food stores. I always like to compare at the store their prices with Thrive and I keep going back to Thrive because they’re usually between 25-40% cheaper. If you make the substitutions I suggested for Keto each truffle will have 0.9g net carbs and 113.57 calories.
Double Chocolate Walnut Truffles

1 cup of walnuts (or any nut you like best)
1/2 cup of maple syrup or monk fruit sweetener
1/2 cup of unsweetened cocoa powder
pinch of salt (about 1/8 tsp)
3/4 cups + 1 cup of chocolate chips
1 tsp coconut oil or MCT oil
Directions
- Add walnuts to a food processor and blend them until. they become a sandy texture
- Melt 3/4 cup of chocolate chips in a double boiler, if you prefer using the microwave do it in 20 to 30 second intervals until they’re fully melted
- Add the salt, maple syrup or sweetener, cocoa powder and melted chocolate into the processor with the walnuts. Process until smooth and evenly combined
- Take one heaping teaspoon of the dough and roll it into a tight ball. Place it on parchment paper. Repeat process until 15 to 16 truffles are made
- Place truffles in the fridge and chill for 30 minutes
- Melt 1 cup of chocolate chips and the coconut oil in a double boiler, if you prefer using the microwave do it in 20 to 30 second intervals until they’re fully melted
- Roll the chilled truffles in the melted chocolate and return them to the plate, place them back in the fridge to chill for 40 minutes
Notes
- Keep your truffles in the refrigerator in an air tight container. The Truffles will be good for up to two weeks in the fridge.
- I prefer to eat my truffles at room temperature, I remove the truffles from the refrigerator and allow the truffles to soften a bit before I enjoy them.
- You can freeze your truffles and they’ll be good for up to 3 months.
