These cookies are so delicious is crazy, I made a batch of 12 cookies and literally ate all the cookies the same night with my boyfriend. Yes! All 12 of them.. They’re crazy delicious and super easy to make so let’s get to it!
What you’ll need:
Fork or whisk (I honestly use a fork, so much easier)
Mixing bowl
Measuring cups and spoons
Cookie scooper or two small spoons
Parchment paper
Bake sheet
Wirerack
Chocolate Chip Oatmeal (GF, Paleo, Grain Free)

1 egg
1/4 cup almond butter or any nut butter you like
1/4 Lakanto maple syrup or regular organic syrup
3 tbsp MTC oil or melted coconut oil or any oil you like
1 tsp vanilla paste or vanilla extract
1/3 almond flour (you can substitute with oatmeal flour)
1 cup sprouted oats
1 scoop of vanilla collagen
2 tbsp ground flaxseed
1/2 tsp ground cinnamon
1/4 tsp nutmeg
1/2 cup chocolate chips
1/2 tsp sea salt flakes (optional)
Directions
- Preheat oven 350F
- Mix egg, almond butter, maple syrup, collagen, mct oil and vanilla paste/extract in a mixing bowl. Whisk all ingredients well
- Using a rubber spatula fold the rest of the ingredients except the chocolate chips to the wet ingredients
- Once all the ingredients have been mixed add 1/4 cup of the chocolate chips and fold until fully incorporated
- Using a cookie scooper or two small spoons, divide the dough into 12 cookies on a parchment paper covered bake sheet and top the cookies with the remaining chocolate chips
- Bake for 12-14 minutes, remove from oven and place cookies in on a wire rack. Sprinkle sea salt on top of the freshly baked cookies
Notes
- Enjoy the cookies warm or wait until fully cooled off, I honestly can’t wait and always eat the cookies when they’re freshly out of the oven
