Egg & Avocado Toast

 I try to eat a healthy meal after my workout to replenish my body. I try really hard to workout at least 5 days a week even if is just 30 minutes. This recipe takes only a few minutes to make and is so delicious that I always look forward to having breakfast when I know I’ll be making my egg and avocado toast
I always have hard boiled eggs in the fridge because they’re an easy snack or quick breakfast paired with healthy fats such as avocados. Just a quick note or hack, leave the cooked eggs with the peel on in an airtight container, they stay fresher and the smell of the eggs don’t takeover your fridge.

Ok, let’s go back to the recipe. If you don’t have hardboiled eggs ready to go just boil water and when the has a consistent boil flow carefully using a spoon drop the eggs slowly in the water and cook them for about 14 minutes. Have a container full of ice and water so you can transfer the cooked eggs to it to cool them off and make it easy to peel.

What you’ll need:

Fork
One small mixing bowl
Knife
Cutting board
Egg slicer

Egg & Avocado Toast

Ingredients

  • 1/2 Avocado without the skin

  • 3 hardboiled eggs peeled

  • 1/4 Jalapeño sliced thinly (optional)

  • Salt & Pepper to taste

  • 4 slices of whole wheat bread or any bread of your choice

Directions

  • In the mixing bowl place the avocado and with a fork begin smashing the avocado
  • Using an egg slicer, slice the eggs long ways and horizontal. If you don’t have an egg slicer cut the egg in half and place the cut side facing down. Cut the egg in small think slices and place the egg in the bowl along with the avocado and the jalapeños
  • Using the fork gently fold the ingredients together making sure the egg doesn’t break much as you want to have a good consistency
  • Add salt and & pepper to taste
  • Using the fork add a layer of the avocado & egg to your toast. I like to toast my bread but it is optional

Notes

  • I like to add a little pinch of pepper flakes to my egg & avocado toast
