Ingredients:
- 16 oz (450g) Rotini pasta
- 1 cup (240ml) Zesty Italian dressing
- 1 English cucumber, diced (approx. 14 oz / 400g)
- 8 oz (225g) Mozzarella pearls
Instructions:
- Cook the rotini in a pot of heavily salted water according to package directions until al dente (usually 1 minute less than the box suggests).
- Immediately drain the pasta into a colander and rinse under a stream of cold water for 30 seconds to stop the cooking process and remove excess starch.
- Dice the English cucumber into uniform 1/2-inch pieces.
- In a large mixing bowl, combine the chilled pasta, diced cucumbers, and mozzarella pearls.
- Pour the Italian dressing over the mixture and toss gently until the pasta is glossy and evenly coated.
