Ingredients:

  • 16 oz (450g) Rotini pasta
  • 1 cup (240ml) Zesty Italian dressing
  • 1 English cucumber, diced (approx. 14 oz / 400g)
  • 8 oz (225g) Mozzarella pearls

Instructions:

  1. Cook the rotini in a pot of heavily salted water according to package directions until al dente (usually 1 minute less than the box suggests).
  2. Immediately drain the pasta into a colander and rinse under a stream of cold water for 30 seconds to stop the cooking process and remove excess starch.
  3. Dice the English cucumber into uniform 1/2-inch pieces.
  4. In a large mixing bowl, combine the chilled pasta, diced cucumbers, and mozzarella pearls.
  5. Pour the Italian dressing over the mixture and toss gently until the pasta is glossy and evenly coated.
