Ingredients:
- 16 oz spaghetti
- 2 tbsp kosher salt
- 1/3 cup extra virgin olive oil
- 6 cloves fresh garlic, thinly sliced
- 1 cup parmesan cheese, freshly grated
- 1/2 tsp red pepper flakes
Instructions:
- Bring a large pot of heavily salted water to a rolling boil. Add the spaghetti and cook for 1-2 minutes less than the package instructions until al dente. Reserve 1 cup of starchy pasta water before draining.
- While the pasta cooks, add the olive oil to a skillet over medium-low heat. Add the sliced garlic and red pepper flakes, sautéing slowly for 3-5 minutes until the garlic is translucent and fragrant.
- Increase the heat to medium. Transfer the drained pasta directly into the garlic oil using tongs.
- Pour in 1/2 cup of the reserved pasta water. Toss vigorously for 2 minutes until the water reduces into a glossy glaze.
- Remove the skillet from heat and stir in the Parmesan cheese until melted and velvety.
