Ingredients:

  • 4 chicken leg quarters (approx. 3-4 lbs)
  • 2 tbsp olive oil
  • 1 tbsp paprika
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp cayenne pepper

Instructions:

  1. Pat every inch of the chicken quarters completely dry with paper towels to ensure maximum crispiness.
  2. Rub each piece of chicken generously with olive oil to act as a binder for the spices.
  3. In a small mixing bowl, combine the paprika, salt, black pepper, garlic powder, onion powder, and cayenne pepper.
  4. Sprinkle the rub over the chicken, massaging it into the skin and under the edges of the leg for full flavor penetration.
  5. Place the chicken in the air fryer basket in a single layer. Set the air fryer to 380°F (193°C) and cook for 12-15 minutes.
  6. Flip each quarter and increase the heat to 400°F (204°C). Air fry for another 10-15 minutes until the skin is deeply browned and crisp.
  7. Use a digital meat thermometer to ensure the thickest part of the thigh reaches an internal temperature of 170°F (77°C).
  8. Remove from the air fryer and let the meat rest for 5 minutes to allow juices to redistribute.
