Ingredients:
- 4 chicken leg quarters (approx. 3-4 lbs)
- 2 tbsp olive oil
- 1 tbsp paprika
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp cayenne pepper
Instructions:
- Pat every inch of the chicken quarters completely dry with paper towels to ensure maximum crispiness.
- Rub each piece of chicken generously with olive oil to act as a binder for the spices.
- In a small mixing bowl, combine the paprika, salt, black pepper, garlic powder, onion powder, and cayenne pepper.
- Sprinkle the rub over the chicken, massaging it into the skin and under the edges of the leg for full flavor penetration.
- Place the chicken in the air fryer basket in a single layer. Set the air fryer to 380°F (193°C) and cook for 12-15 minutes.
- Flip each quarter and increase the heat to 400°F (204°C). Air fry for another 10-15 minutes until the skin is deeply browned and crisp.
- Use a digital meat thermometer to ensure the thickest part of the thigh reaches an internal temperature of 170°F (77°C).
- Remove from the air fryer and let the meat rest for 5 minutes to allow juices to redistribute.
