Ingredients:
- 2 tbsp olive oil
- 4 cloves fresh garlic, minced
- 1 tsp smoked paprika
- 1 tsp onion powder
- 1 tsp Italian seasoning
- 3/4 tsp fine sea salt
- 1/2 tsp cracked black pepper
- 2 chicken leg quarters, skin-on and bone-in (approx 1 lb each)
Instructions:
- Pat the chicken quarters completely dry using paper towels to ensure maximum skin crispiness.
- In a small bowl, whisk together the olive oil, minced garlic, smoked paprika, onion powder, Italian seasoning, salt, and black pepper into a thick paste.
- Rub the garlic paste thoroughly over the top of the chicken and under the skin.
- Preheat the air fryer to 380°F (193°C).
- Place the chicken quarters in the air fryer basket, skin-side down, and cook for 12-15 minutes.
- Carefully flip the quarters to be skin-side up.
- Air fry for an additional 12-15 minutes until the skin is mahogany-colored and the internal temperature reaches 165°F (74°C) at the thickest part of the thigh.
- Transfer the chicken to a plate and let it rest for 5-10 minutes before serving to redistribute the juices.
