Ingredients:
- 2 lbs cauliflower, cut into bite-sized florets
- 3 tbsp unsalted butter, melted
- 2 cloves garlic, minced
- 1/2 tsp kosher salt
- 1/4 tsp cracked black pepper
- 1/2 cup Parmesan cheese, freshly grated
- 1 1/2 cups sharp Cheddar cheese, shredded
- 1/2 cup Panko breadcrumbs
- 1 tsp smoked paprika
Instructions:
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, toss the cauliflower florets with melted butter, minced garlic, salt, and pepper until evenly coated.
- In a separate small bowl, combine the shredded Cheddar, grated Parmesan, Panko breadcrumbs, and smoked paprika.
- Spread the buttered cauliflower in a single layer on the prepared baking sheet.
- Generously sprinkle the cheese and breadcrumb mixture over the top, pressing down slightly to anchor the cheese to the florets.
- Bake in the center rack of the oven for 18–22 minutes until the cheese is bubbling and the cauliflower edges are deep golden brown.
- Let the dish rest for 5 minutes to allow the cheese sauce to set before serving.
