Ingredients:

  • 2 lbs cauliflower, cut into bite-sized florets
  • 3 tbsp unsalted butter, melted
  • 2 cloves garlic, minced
  • 1/2 tsp kosher salt
  • 1/4 tsp cracked black pepper
  • 1/2 cup Parmesan cheese, freshly grated
  • 1 1/2 cups sharp Cheddar cheese, shredded
  • 1/2 cup Panko breadcrumbs
  • 1 tsp smoked paprika

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, toss the cauliflower florets with melted butter, minced garlic, salt, and pepper until evenly coated.
  3. In a separate small bowl, combine the shredded Cheddar, grated Parmesan, Panko breadcrumbs, and smoked paprika.
  4. Spread the buttered cauliflower in a single layer on the prepared baking sheet.
  5. Generously sprinkle the cheese and breadcrumb mixture over the top, pressing down slightly to anchor the cheese to the florets.
  6. Bake in the center rack of the oven for 18–22 minutes until the cheese is bubbling and the cauliflower edges are deep golden brown.
  7. Let the dish rest for 5 minutes to allow the cheese sauce to set before serving.
