Ingredients:

  • 1 lb sirloin steak, thinly sliced against the grain
  • 1 tbsp reduced-sodium soy sauce
  • 1 tbsp cornstarch
  • 1 tsp sesame oil
  • 1/2 cup reduced-sodium beef broth
  • 1/4 cup reduced-sodium soy sauce
  • 1 tbsp honey
  • 1 tsp rice vinegar
  • 1 tsp grated fresh ginger
  • 3 cloves garlic, minced
  • 1 tsp cornstarch
  • 12 oz lo mein noodles
  • 4 cups broccoli florets, bite-sized
  • 2 tbsp avocado oil
  • 2 green onions, sliced
  • 1 tsp toasted sesame seeds

Instructions:

  1. Velvet the beef: In a bowl, combine the 1 lb sliced sirloin, 1 tbsp reduced-sodium soy sauce, 1 tbsp cornstarch, and 1 tsp sesame oil. Toss until coated and let sit for 10 minutes.
  2. Whisk the glaze: In a separate bowl, stir together 1/2 cup reduced-sodium beef broth, 1/4 cup reduced-sodium soy sauce, 1 tbsp honey, 1 tsp rice vinegar, 1 tsp grated fresh ginger, 3 cloves minced garlic, and 1 tsp cornstarch until smooth.
  3. Boil the noodles: Cook 12 oz lo mein noodles according to package instructions. Drain and set aside.
  4. Blanch the broccoli: Drop 4 cups broccoli florets into the boiling noodle water for exactly 60 seconds. Drain immediately and rinse with cold water to stop the cooking process.
  5. Sear the beef: Heat 1 tbsp avocado oil in a wok over high heat until shimmering. Spread the beef in a single layer and sear without moving for 2 minutes to develop a rich brown crust. Stir-fry for another 1-2 minutes until the beef reaches an internal temperature of 145°F (63°C). Remove beef from the pan and set aside to rest for 3 minutes.
  6. Sauté broccoli: Add the remaining 1 tbsp avocado oil to the pan. Toss in the blanched broccoli and stir-fry for 1 minute.
  7. Thicken the sauce: Pour in the prepared glaze mixture. Stir constantly for 1-2 minutes until the sauce bubbles and thickens into a glossy coating.
  8. Final assembly: Return the rested beef and cooked noodles to the pan. Toss everything together on medium-high heat for 60 seconds until evenly coated. Garnish with sliced green onions and toasted sesame seeds before serving.
