Ingredients:
- 3 lbs chicken wings, party-cut
- 1 tbsp baking powder
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 cup cayenne pepper hot sauce
- 4 tbsp unsalted butter, melted
- 1 tbsp honey
- 1/4 tsp Worcestershire sauce
Instructions:
- Use paper towels to pat each wing bone-dry to ensure maximum crispness.
- In a large bowl, toss the wings with baking powder, salt, pepper, and garlic powder until evenly coated.
- Place a wire cooling rack inside a baking sheet and arrange wings in a single layer, ensuring they do not touch.
- Bake at 425°F (218°C) for 25 minutes.
- Carefully flip each wing to ensure the bottom side renders its fat.
- Bake for another 20 minutes or until the skin is mahogany-colored and firm.
- Whisk together the hot sauce, melted butter, honey, and Worcestershire sauce until smooth.
- Transfer hot wings to a clean bowl and toss with half of the prepared sauce.
- Let the wings rest for 2 minutes to allow the glaze to penetrate the crust.
- Toss the wings with the remaining sauce for a high-gloss finish.
