  • 1 tbsp baking powder
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 cup cayenne pepper hot sauce
  • 4 tbsp unsalted butter, melted
  • 1 tbsp honey
  • 1/4 tsp Worcestershire sauce

Instructions:

  1. Use paper towels to pat each wing bone-dry to ensure maximum crispness.
  2. In a large bowl, toss the wings with baking powder, salt, pepper, and garlic powder until evenly coated.
  3. Place a wire cooling rack inside a baking sheet and arrange wings in a single layer, ensuring they do not touch.
  4. Bake at 425°F (218°C) for 25 minutes.
  5. Carefully flip each wing to ensure the bottom side renders its fat.
  6. Bake for another 20 minutes or until the skin is mahogany-colored and firm.
  7. Whisk together the hot sauce, melted butter, honey, and Worcestershire sauce until smooth.
  8. Transfer hot wings to a clean bowl and toss with half of the prepared sauce.
  9. Let the wings rest for 2 minutes to allow the glaze to penetrate the crust.
  10. Toss the wings with the remaining sauce for a high-gloss finish.
