Ingredients:
- 2 tbsp smoked paprika
- 1 tsp cayenne pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp dried thyme
- 1/2 tsp dried oregano
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 lb jumbo shrimp, peeled and deveined
- 2 tbsp extra virgin olive oil
- 1 tbsp lemon juice
- 4 tbsp unsalted butter, melted
- 1 tbsp fresh parsley, finely chopped
Instructions:
- Whisk olive oil, lemon juice, smoked paprika, cayenne, garlic powder, onion powder, thyme, oregano, salt, and black pepper in a bowl. Note: Mixing the oil first prevents spice clumps.
- Add shrimp to the bowl and toss gently. Let them marinate for 10-15 minutes. Note: Don't go over 30 minutes or the lemon juice will mush the shrimp.
- Preheat your grill to medium high (approximately 400°F/200°C).
- Place shrimp directly over the heat.
- Grill 2 minutes per side until they reach a bright pink hue and slight char.
- Mix melted butter with a pinch of the Cajun rub and the chopped parsley.
- Brush the shrimp generously with the butter glaze during the final 30 seconds of cooking.
- Remove immediately from the heat and serve.
