Ingredients:

  • 2 tbsp smoked paprika
  • 1 tsp cayenne pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 lb jumbo shrimp, peeled and deveined
  • 2 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • 4 tbsp unsalted butter, melted
  • 1 tbsp fresh parsley, finely chopped

Instructions:

  1. Whisk olive oil, lemon juice, smoked paprika, cayenne, garlic powder, onion powder, thyme, oregano, salt, and black pepper in a bowl. Note: Mixing the oil first prevents spice clumps.
  2. Add shrimp to the bowl and toss gently. Let them marinate for 10-15 minutes. Note: Don't go over 30 minutes or the lemon juice will mush the shrimp.
  3. Preheat your grill to medium high (approximately 400°F/200°C).
  4. Place shrimp directly over the heat.
  5. Grill 2 minutes per side until they reach a bright pink hue and slight char.
  6. Mix melted butter with a pinch of the Cajun rub and the chopped parsley.
  7. Brush the shrimp generously with the butter glaze during the final 30 seconds of cooking.
  8. Remove immediately from the heat and serve.
