Ingredients:

  • 2 lbs English cucumbers, thinly sliced
  • 1/2 cup red onion, thinly slivered
  • 1 tsp kosher salt
  • 1/2 cup mayonnaise
  • 2 tbsp apple cider vinegar
  • 1 tbsp granulated sugar
  • 1 tbsp fresh dill, finely chopped
  • 1/2 tsp garlic powder
  • 1/2 tsp black pepper, freshly cracked
  • 1/4 tsp salt

Instructions:

  1. Slice the cucumbers into thin rounds and sliver the red onion.
  2. Toss the cucumbers and onions in a colander with 1 tsp of kosher salt and let them sit for 10 minutes to remove excess water.
  3. Rinse the vegetables quickly under cold water and pat dry with a paper towel.
  4. In a small bowl, whisk together the mayonnaise, apple cider vinegar, sugar, garlic powder, salt, and pepper until the sugar is dissolved and the mixture is glossy.
  5. Stir in the finely chopped fresh dill.
  6. Transfer the dried cucumbers and onions into a large mixing bowl, pour the dressing over the vegetables, and gently fold until evenly coated.
  7. Optional: Chill for 10 minutes before serving for enhanced flavor.
