Ingredients:
- 2 lbs English cucumbers, thinly sliced
- 1/2 cup red onion, thinly slivered
- 1 tsp kosher salt
- 1/2 cup mayonnaise
- 2 tbsp apple cider vinegar
- 1 tbsp granulated sugar
- 1 tbsp fresh dill, finely chopped
- 1/2 tsp garlic powder
- 1/2 tsp black pepper, freshly cracked
- 1/4 tsp salt
Instructions:
- Slice the cucumbers into thin rounds and sliver the red onion.
- Toss the cucumbers and onions in a colander with 1 tsp of kosher salt and let them sit for 10 minutes to remove excess water.
- Rinse the vegetables quickly under cold water and pat dry with a paper towel.
- In a small bowl, whisk together the mayonnaise, apple cider vinegar, sugar, garlic powder, salt, and pepper until the sugar is dissolved and the mixture is glossy.
- Stir in the finely chopped fresh dill.
- Transfer the dried cucumbers and onions into a large mixing bowl, pour the dressing over the vegetables, and gently fold until evenly coated.
- Optional: Chill for 10 minutes before serving for enhanced flavor.
