Ingredients:
- 1 medium head cauliflower (approx. 2 lbs / 900g), cut into bite-sized florets
- 3 tbsp olive oil
- 2 tbsp curry powder
- 1/2 tsp turmeric powder
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp fresh lemon juice
Instructions:
- Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.
- Cut the cauliflower into uniform pieces, roughly 1 inch (2.5cm) wide.
- In a large mixing bowl, whisk together the olive oil, curry powder, turmeric, garlic powder, salt, and pepper.
- Add the cauliflower florets to the bowl and toss thoroughly until every piece is coated in the golden oil.
- Spread the cauliflower in a single layer on the baking sheet, ensuring they do not overcrowd the pan.
- Bake for 20 minutes, flipping the florets halfway through, until the edges are charred and the center is tender.
- Remove from the oven and immediately drizzle fresh lemon juice over the hot cauliflower, tossing gently.
- Garnish with chopped fresh cilantro and red pepper flakes before serving.
