Ingredients:

  • 1 medium head cauliflower (approx. 2 lbs / 900g), cut into bite-sized florets
  • 3 tbsp olive oil
  • 2 tbsp curry powder
  • 1/2 tsp turmeric powder
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp fresh lemon juice

Instructions:

  1. Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.
  2. Cut the cauliflower into uniform pieces, roughly 1 inch (2.5cm) wide.
  3. In a large mixing bowl, whisk together the olive oil, curry powder, turmeric, garlic powder, salt, and pepper.
  4. Add the cauliflower florets to the bowl and toss thoroughly until every piece is coated in the golden oil.
  5. Spread the cauliflower in a single layer on the baking sheet, ensuring they do not overcrowd the pan.
  6. Bake for 20 minutes, flipping the florets halfway through, until the edges are charred and the center is tender.
  7. Remove from the oven and immediately drizzle fresh lemon juice over the hot cauliflower, tossing gently.
  8. Garnish with chopped fresh cilantro and red pepper flakes before serving.
