  • 1 tbsp extra virgin olive oil
  • 2 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • 1/2 tsp garlic powder
  • 1/2 tsp dried Italian seasoning
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh parsley, finely minced

Instructions:

  1. In a medium mixing bowl, combine the avocado oil mayonnaise and Greek yogurt. Whisk vigorously until the mixture is smooth and no lumps of yogurt remain.
  2. Slowly stream in the olive oil while whisking to create a glossy, unified base.
  3. Add the apple cider vinegar, Dijon mustard, and honey. Continue whisking until the dressing looks pale and creamy.
  4. Stir in the garlic powder, Italian seasoning, salt, and pepper.
  5. Fold in the finely minced fresh parsley using a spatula.
  6. Taste the dressing; if it feels too thick, whisk in one teaspoon of water at a time until the desired consistency is reached.
