Ingredients:
- 1 lb rotini or fusilli pasta
- 1 tbsp salt
- 1/2 cup mayonnaise
- 3/4 cup grated parmesan cheese
- 2 tbsp lemon juice
- 1 tsp lemon zest
- 2 cloves garlic, minced
- 1/4 tsp black pepper
- 1/4 tsp salt
- 1/4 cup fresh parsley, chopped
- 2 tbsp red onion, finely diced
Instructions:
- Bring a large pot of heavily salted water to a rolling boil. Add the pasta and cook until it is just shy of al dente. Drain in a colander and rinse briefly with cold water to stop the cooking process. Set aside to air-dry for 5 minutes.
- In a large mixing bowl, whisk together the mayonnaise, lemon juice, and lemon zest until smooth. Slowly fold in the grated Parmesan cheese and minced garlic, whisking vigorously until a consistent, pale-gold cream forms.
- Add the cooled pasta to the bowl and gently fold the noodles into the dressing until every spiral is fully coated. Fold in the chopped parsley and red onion.
- Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to marry before serving.
