Ingredients:

  • 1 lb rotini or fusilli pasta
  • 1 tbsp salt
  • 1/2 cup mayonnaise
  • 3/4 cup grated parmesan cheese
  • 2 tbsp lemon juice
  • 1 tsp lemon zest
  • 2 cloves garlic, minced
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp red onion, finely diced

Instructions:

  1. Bring a large pot of heavily salted water to a rolling boil. Add the pasta and cook until it is just shy of al dente. Drain in a colander and rinse briefly with cold water to stop the cooking process. Set aside to air-dry for 5 minutes.
  2. In a large mixing bowl, whisk together the mayonnaise, lemon juice, and lemon zest until smooth. Slowly fold in the grated Parmesan cheese and minced garlic, whisking vigorously until a consistent, pale-gold cream forms.
  3. Add the cooled pasta to the bowl and gently fold the noodles into the dressing until every spiral is fully coated. Fold in the chopped parsley and red onion.
  4. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to marry before serving.
