Ingredients:
- 1.5 lb large shrimp, peeled and deveined
- 1/4 cup extra virgin olive oil
- 4 cloves garlic, minced
- 2 tbsp fresh lemon juice
- 1 tsp dried Italian seasoning
- 1 tsp paprika
- 1/2 tsp kosher salt
- 1/4 tsp cracked black pepper
- 1 tbsp fresh parsley, finely chopped
- 1 tsp brown sugar
- 2 tbsp unsalted butter, melted
Instructions:
- In a large mixing bowl, whisk together the olive oil, minced garlic, 1 tablespoon of lemon juice, Italian seasoning, paprika, salt, pepper, chopped parsley, and brown sugar until the sugar is dissolved and the marinade is emulsified.
- Pat the shrimp completely dry with paper towels to ensure the marinade adheres and the shrimp chars properly. Toss the shrimp into the marinade bowl and stir until thoroughly coated.
- Place the shrimp in the refrigerator to marinate for 30 minutes. Do not exceed 1 hour to prevent the acid from altering the shrimp's texture.
- Preheat an outdoor grill to high heat. Thread shrimp onto skewers if desired.
- Sear the shrimp over high heat for approximately 3 minutes per side, or until they curl into a 'C' shape and have a mahogany crust.
- Remove from grill and immediately toss with melted butter and the remaining 1 tablespoon of lemon juice. Garnish with fresh parsley leaves.
