Ingredients:

  • 1.5 lb large shrimp, peeled and deveined
  • 1/4 cup extra virgin olive oil
  • 4 cloves garlic, minced
  • 2 tbsp fresh lemon juice
  • 1 tsp dried Italian seasoning
  • 1 tsp paprika
  • 1/2 tsp kosher salt
  • 1/4 tsp cracked black pepper
  • 1 tbsp fresh parsley, finely chopped
  • 1 tsp brown sugar
  • 2 tbsp unsalted butter, melted

Instructions:

  1. In a large mixing bowl, whisk together the olive oil, minced garlic, 1 tablespoon of lemon juice, Italian seasoning, paprika, salt, pepper, chopped parsley, and brown sugar until the sugar is dissolved and the marinade is emulsified.
  2. Pat the shrimp completely dry with paper towels to ensure the marinade adheres and the shrimp chars properly. Toss the shrimp into the marinade bowl and stir until thoroughly coated.
  3. Place the shrimp in the refrigerator to marinate for 30 minutes. Do not exceed 1 hour to prevent the acid from altering the shrimp's texture.
  4. Preheat an outdoor grill to high heat. Thread shrimp onto skewers if desired.
  5. Sear the shrimp over high heat for approximately 3 minutes per side, or until they curl into a 'C' shape and have a mahogany crust.
  6. Remove from grill and immediately toss with melted butter and the remaining 1 tablespoon of lemon juice. Garnish with fresh parsley leaves.
