Ingredients:

  • 1 lb jumbo shrimp, peeled and deveined
  • 2 tbsp extra virgin olive oil
  • 3 cloves garlic, minced
  • 1 tbsp fresh lemon juice
  • 1 tsp smoked paprika
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes

Instructions:

  1. Pat the shrimp completely dry with paper towels.
  2. In a large bowl, whisk together the olive oil, minced garlic, lemon juice, smoked paprika, salt, pepper, and red pepper flakes.
  3. Toss the shrimp in the marinade until evenly coated and let sit for 5–10 minutes at room temperature.
  4. Place a grill pan over medium-high heat until shimmering hot. Lightly brush the ridges with oil.
  5. Place shrimp in the pan in a single layer. Press down slightly with tongs to ensure contact with the ridges.
  6. Cook undisturbed for 2–3 minutes, then flip once mahogany-colored char marks appear and edges turn pink.
  7. Cook for another 2 minutes and remove immediately once the shrimp form a 'C' shape and are opaque.
