Ingredients:
- 1 lb jumbo shrimp, peeled and deveined
- 2 tbsp extra virgin olive oil
- 3 cloves garlic, minced
- 1 tbsp fresh lemon juice
- 1 tsp smoked paprika
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes
Instructions:
- Pat the shrimp completely dry with paper towels.
- In a large bowl, whisk together the olive oil, minced garlic, lemon juice, smoked paprika, salt, pepper, and red pepper flakes.
- Toss the shrimp in the marinade until evenly coated and let sit for 5–10 minutes at room temperature.
- Place a grill pan over medium-high heat until shimmering hot. Lightly brush the ridges with oil.
- Place shrimp in the pan in a single layer. Press down slightly with tongs to ensure contact with the ridges.
- Cook undisturbed for 2–3 minutes, then flip once mahogany-colored char marks appear and edges turn pink.
- Cook for another 2 minutes and remove immediately once the shrimp form a 'C' shape and are opaque.
