Ingredients:
- 1/4 cup extra virgin olive oil
- 2 tbsp fresh lemon juice
- 3 cloves garlic, minced
- 1 tsp smoked paprika
- 1 tsp dried oregano
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1.5 lb jumbo shrimp, peeled and deveined
- 1 medium red bell pepper, cut into 1-inch chunks
- 1 medium red onion, cut into 1-inch chunks
Instructions:
- In a large bowl, whisk together the olive oil, lemon juice, minced garlic, smoked paprika, oregano, salt, and pepper to create an emulsion.
- Pat the shrimp dry with a paper towel to ensure a better sear.
- Toss the shrimp in the marinade and let them sit for 15-20 minutes.
- Thread the shrimp onto skewers, alternating with pieces of bell pepper and red onion, leaving slight gaps between pieces for uniform heat circulation.
- Preheat your grill to medium-high.
- Place skewers on the grill and cook for 2–3 minutes per side until the shrimp are opaque and vibrant pink.
