Ingredients:

  • 1/4 cup extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 3 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1.5 lb jumbo shrimp, peeled and deveined
  • 1 medium red bell pepper, cut into 1-inch chunks
  • 1 medium red onion, cut into 1-inch chunks

Instructions:

  1. In a large bowl, whisk together the olive oil, lemon juice, minced garlic, smoked paprika, oregano, salt, and pepper to create an emulsion.
  2. Pat the shrimp dry with a paper towel to ensure a better sear.
  3. Toss the shrimp in the marinade and let them sit for 15-20 minutes.
  4. Thread the shrimp onto skewers, alternating with pieces of bell pepper and red onion, leaving slight gaps between pieces for uniform heat circulation.
  5. Preheat your grill to medium-high.
  6. Place skewers on the grill and cook for 2–3 minutes per side until the shrimp are opaque and vibrant pink.
