Ingredients:

  • 1 lb lean ground turkey
  • 1 tbsp olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 3 cups cooked brown rice
  • 3 cups broccoli florets, chopped small
  • 2 medium carrots, shredded
  • 1 cup chicken broth
  • 1/2 cup Greek yogurt
  • 1 tsp dried thyme
  • 1.5 cups shredded sharp cheddar cheese

Instructions:

  1. Heat olive oil in a 12-inch skillet over medium-high heat. Add ground turkey, onion, and garlic; sauté until the meat is browned and no longer pink. Stir in salt and pepper.
  2. In a large mixing bowl, combine the browned turkey, cooked brown rice, broccoli, and shredded carrots. Fold in the broth, Greek yogurt, thyme, and 1 cup of the shredded cheddar cheese until the mixture is velvety.
  3. Transfer the mixture into a 9x13 inch baking dish, smoothing the top with a spatula. Sprinkle the remaining 1/2 cup of cheese evenly across the surface.
  4. Bake at 375°F (190°C) for 20–25 minutes until the cheese is bubbling and the edges are golden brown.
  5. Remove from the oven and let the casserole rest for 5 minutes to allow the sauce to set before serving.
