Ingredients:

  • 1 lb chicken breast, cut into 1-inch cubes
  • 1 lb sweet potato, peeled and cut into ½-inch cubes
  • 2 tbsp extra virgin olive oil
  • 3 cloves garlic, minced
  • 1 tsp smoked paprika
  • ½ tsp sea salt
  • ¼ tsp cracked black pepper
  • 1 tbsp honey
  • 1 tbsp fresh lemon juice
  • 1 tsp red pepper flakes

Instructions:

  1. Toss the cubed chicken and sweet potatoes in a large bowl.
  2. Drizzle with olive oil and add the minced garlic, smoked paprika, salt, and pepper.
  3. Stir vigorously until the potatoes are glistening and the chicken is fully coated.
  4. Preheat the air fryer to 400°F (200°C).
  5. Place the mixture in the basket in a single layer. Note: Don't pile them up or they won't crisp.
  6. Cook for 15-18 minutes, shaking the basket every 5 minutes, until potatoes are mahogany colored.
  7. Check the chicken with a thermometer. USDA guidance puts the safe internal temperature at 165°F (74°C).
  8. Whisk honey, lemon juice, and red pepper flakes in a small bowl.
  9. Drizzle the mixture over the cooked chicken and potatoes directly in the basket.
  10. Toss to coat and serve immediately.
