Instructions:
- Zest the lime before juicing to capture the essential oils, then mince the garlic into a fine paste.
- Combine the olive oil, lime juice, and honey in a medium mixing bowl. Whisk vigorously for 60 seconds until the mixture is thickened and glossy.
- Fold in the minced garlic, salt, pepper, red pepper flakes, and chopped cilantro; stir until herbs are evenly suspended.
- Place shrimp in a Ziploc bag or airtight container, pour the marinade over them, and marinate for 15 to 30 minutes.
- Grill shrimp over high heat until charred and opaque, ensuring a snap-tender texture.
