  • 3 tbsp fresh lime juice
  • 2 tbsp honey
  • 3 cloves garlic, minced
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes
  • 1 tbsp fresh cilantro, finely chopped

Instructions:

  1. Zest the lime before juicing to capture the essential oils, then mince the garlic into a fine paste.
  2. Combine the olive oil, lime juice, and honey in a medium mixing bowl. Whisk vigorously for 60 seconds until the mixture is thickened and glossy.
  3. Fold in the minced garlic, salt, pepper, red pepper flakes, and chopped cilantro; stir until herbs are evenly suspended.
  4. Place shrimp in a Ziploc bag or airtight container, pour the marinade over them, and marinate for 15 to 30 minutes.
  5. Grill shrimp over high heat until charred and opaque, ensuring a snap-tender texture.
