Ingredients:

  • 16 oz Rotini or Macaroni pasta
  • 1 tbsp salt
  • 1 cup mayonnaise
  • 2 tbsp apple cider vinegar
  • 1 tbsp sugar
  • 1 tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 cup celery, finely diced
  • 1 cup red bell pepper, diced
  • ½ cup red onion, finely minced
  • ½ cup carrots, shredded
  • ¼ cup fresh parsley, chopped

Instructions:

  1. Bring a large pot of salted water to a rolling boil. Add pasta and cook for 1 minute less than the package directions for 'al dente'. Drain in a colander and immediately rinse with cold water until chilled, shaking well to remove excess moisture.
  2. In a large mixing bowl, combine the mayonnaise, apple cider vinegar, sugar, garlic powder, salt, and pepper. Whisk vigorously until the sugar has dissolved and the mixture is smooth.
  3. Add the chilled pasta to the bowl and toss gently until every piece is evenly coated in the dressing.
  4. Fold in the diced celery, bell pepper, red onion, carrots, and parsley. Stir until vegetables are evenly distributed, taking care not to over-mix.
