Ingredients:
- 16 oz Rotini or Macaroni pasta
- 1 tbsp salt
- 1 cup mayonnaise
- 2 tbsp apple cider vinegar
- 1 tbsp sugar
- 1 tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
- 1 cup celery, finely diced
- 1 cup red bell pepper, diced
- ½ cup red onion, finely minced
- ½ cup carrots, shredded
- ¼ cup fresh parsley, chopped
Instructions:
- Bring a large pot of salted water to a rolling boil. Add pasta and cook for 1 minute less than the package directions for 'al dente'. Drain in a colander and immediately rinse with cold water until chilled, shaking well to remove excess moisture.
- In a large mixing bowl, combine the mayonnaise, apple cider vinegar, sugar, garlic powder, salt, and pepper. Whisk vigorously until the sugar has dissolved and the mixture is smooth.
- Add the chilled pasta to the bowl and toss gently until every piece is evenly coated in the dressing.
- Fold in the diced celery, bell pepper, red onion, carrots, and parsley. Stir until vegetables are evenly distributed, taking care not to over-mix.
