Ingredients:

  • 1 large head (approx. 2 lbs / 900g) cauliflower, trimmed of leaves
  • 3 tbsp extra virgin olive oil
  • 1/2 cup (50g) freshly grated Parmesan cheese
  • 3 cloves (15g) garlic, minced fine
  • 1 tsp smoked paprika
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
  2. Place the cauliflower head stem-side down and slice vertically through the center to create 4 steaks, each approximately 3/4 inch (2cm) thick.
  3. In a small bowl, combine the grated Parmesan, minced garlic, smoked paprika, salt, pepper, and red pepper flakes; mix until evenly distributed.
  4. Brush both sides of each cauliflower steak generously with olive oil.
  5. Press the Parmesan mixture firmly onto both sides of the steaks, packing the cheese into the crevices of the florets.
  6. Place steaks on the baking sheet, ensuring they are not touching, and roast for 25–30 minutes.
  7. Carefully flip the steaks at the halfway mark using a wide spatula and cook until the edges are mahogany-colored and the cheese has formed a hard, golden crust.
