Ingredients:
- 1 large head (approx. 2 lbs / 900g) cauliflower, trimmed of leaves
- 3 tbsp extra virgin olive oil
- 1/2 cup (50g) freshly grated Parmesan cheese
- 3 cloves (15g) garlic, minced fine
- 1 tsp smoked paprika
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 1/4 tsp red pepper flakes
Instructions:
- Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
- Place the cauliflower head stem-side down and slice vertically through the center to create 4 steaks, each approximately 3/4 inch (2cm) thick.
- In a small bowl, combine the grated Parmesan, minced garlic, smoked paprika, salt, pepper, and red pepper flakes; mix until evenly distributed.
- Brush both sides of each cauliflower steak generously with olive oil.
- Press the Parmesan mixture firmly onto both sides of the steaks, packing the cheese into the crevices of the florets.
- Place steaks on the baking sheet, ensuring they are not touching, and roast for 25–30 minutes.
- Carefully flip the steaks at the halfway mark using a wide spatula and cook until the edges are mahogany-colored and the cheese has formed a hard, golden crust.
