Ingredients:

  • 1 lb lean ground turkey
  • 1 tbsp olive oil
  • 1 medium yellow onion, diced
  • 1 large red bell pepper, diced
  • 1 large green bell pepper, diced
  • 2 cloves garlic, minced
  • 4 large whole eggs
  • 1 cup liquid egg whites
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp taco seasoning
  • 1/2 cup shredded sharp cheddar cheese
  • 1/2 cup fire-roasted diced tomatoes, drained

Instructions:

  1. Heat the olive oil in a large non-stick skillet over medium-high heat.
  2. Add the ground turkey, breaking it apart with a spatula until browned.
  3. Stir in the diced onions and bell peppers, cooking for 4–5 minutes until tender-crisp and slightly charred.
  4. Stir in the minced garlic and taco seasoning, cooking for 60 seconds until fragrant.
  5. While the meat is searing, whisk the whole eggs, egg whites, salt, and pepper in a bowl until uniform and frothy.
  6. Reduce skillet heat to medium and pour the egg mixture over the meat and vegetables.
  7. Using a spatula, gently push the eggs from the edges toward the center until set but still slightly moist.
  8. Fold in the shredded cheese and fire-roasted tomatoes until the cheese is melted and glossy.
  9. Remove the pan from heat and divide the mixture evenly among four meal prep containers.
