Ingredients:
- 1 lb lean ground turkey
- 1 tbsp olive oil
- 1 medium yellow onion, diced
- 1 large red bell pepper, diced
- 1 large green bell pepper, diced
- 2 cloves garlic, minced
- 4 large whole eggs
- 1 cup liquid egg whites
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp taco seasoning
- 1/2 cup shredded sharp cheddar cheese
- 1/2 cup fire-roasted diced tomatoes, drained
Instructions:
- Heat the olive oil in a large non-stick skillet over medium-high heat.
- Add the ground turkey, breaking it apart with a spatula until browned.
- Stir in the diced onions and bell peppers, cooking for 4–5 minutes until tender-crisp and slightly charred.
- Stir in the minced garlic and taco seasoning, cooking for 60 seconds until fragrant.
- While the meat is searing, whisk the whole eggs, egg whites, salt, and pepper in a bowl until uniform and frothy.
- Reduce skillet heat to medium and pour the egg mixture over the meat and vegetables.
- Using a spatula, gently push the eggs from the edges toward the center until set but still slightly moist.
- Fold in the shredded cheese and fire-roasted tomatoes until the cheese is melted and glossy.
- Remove the pan from heat and divide the mixture evenly among four meal prep containers.
