Ingredients:
- 1 large head (approx. 2 lbs / 900g) cauliflower
- 3 tbsp (45ml) extra virgin olive oil
- 3 cloves (15g) garlic, finely minced
- 1 tsp (5g) smoked paprika
- 1/2 tsp (3g) onion powder
- 1 tsp (6g) kosher salt
- 1/2 tsp (3g) cracked black pepper
- 1 tbsp (15ml) fresh lemon juice
Instructions:
- Trim the very bottom of the cauliflower stem so the head sits completely flat on the cutting board.
- Carefully slice off the outer leaves and the rounded outer florets from both sides, leaving a center slab about 2-3 inches wide.
- Cut the remaining center block vertically into 1-inch (2.5cm) thick steaks.
- In a small bowl, whisk together 2 tbsp (30ml) of olive oil, minced garlic, smoked paprika, onion powder, salt, and pepper.
- Place steaks on a parchment-lined baking sheet and generously apply the garlic rub to both sides of each steak using a brush.
- Preheat oven to 400°F (200°C) and roast the steaks for 15 minutes.
- Carefully flip each steak using a wide spatula and brush the remaining 1 tbsp (15ml) of olive oil on the browned side.
- Roast for another 15 minutes or until edges are deep golden-brown and the stem is fork-tender.
- Immediately drizzle with fresh lemon juice while the steaks are hot.
