Ingredients:
- 2 cups broccoli florets (approx. 150g), cut into bite-sized pieces
- 2 medium bell peppers (300g), sliced into 1-inch strips
- 1 large zucchini (200g), sliced into 1/2-inch thick half-moons
- 0.5 small red onion (50g), cut into thick wedges
- 1.5 tbsp avocado oil or light olive oil
- 1 tsp garlic powder
- 0.5 tsp dried oregano
- 0.5 tsp kosher salt
- 0.25 tsp cracked black pepper
- Lemon wedges for serving
Instructions:
- Chop all vegetables into uniform sizes to ensure even cooking. Use a kitchen towel to pat the vegetables completely dry to prevent steaming.
- Place the dried vegetables in a large mixing bowl. Drizzle with avocado oil and sprinkle with garlic powder, dried oregano, salt, and pepper.
- Toss the mixture thoroughly for at least 30 seconds until every piece is evenly coated in oil and seasoning.
- Preheat your air fryer to 390°F (200°C) for 3 minutes.
- Arrange the seasoned vegetables in the air fryer basket, filling it no more than halfway to allow for proper airflow.
- Air fry for 12–15 minutes, removing the basket to give it a firm shake at the 7-minute mark.
- Check for visual cues: broccoli tips should be dark brown and peppers should show slight blistering. Serve immediately with a squeeze of fresh lemon.
