Ingredients:

  • 2 cups broccoli florets (approx. 150g), cut into bite-sized pieces
  • 2 medium bell peppers (300g), sliced into 1-inch strips
  • 1 large zucchini (200g), sliced into 1/2-inch thick half-moons
  • 0.5 small red onion (50g), cut into thick wedges
  • 1.5 tbsp avocado oil or light olive oil
  • 1 tsp garlic powder
  • 0.5 tsp dried oregano
  • 0.5 tsp kosher salt
  • 0.25 tsp cracked black pepper
  • Lemon wedges for serving

Instructions:

  1. Chop all vegetables into uniform sizes to ensure even cooking. Use a kitchen towel to pat the vegetables completely dry to prevent steaming.
  2. Place the dried vegetables in a large mixing bowl. Drizzle with avocado oil and sprinkle with garlic powder, dried oregano, salt, and pepper.
  3. Toss the mixture thoroughly for at least 30 seconds until every piece is evenly coated in oil and seasoning.
  4. Preheat your air fryer to 390°F (200°C) for 3 minutes.
  5. Arrange the seasoned vegetables in the air fryer basket, filling it no more than halfway to allow for proper airflow.
  6. Air fry for 12–15 minutes, removing the basket to give it a firm shake at the 7-minute mark.
  7. Check for visual cues: broccoli tips should be dark brown and peppers should show slight blistering. Serve immediately with a squeeze of fresh lemon.
