Ingredients:

  • 2 lbs lean ground beef
  • 2 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper
  • 1 cup chunky salsa
  • 2 tbsp tomato paste

Instructions:

  1. Place the raw ground beef in the bottom of the slow cooker.
  2. Whisk together the chili powder, cumin, garlic powder, onion powder, paprika, salt, pepper, and cayenne in a small bowl.
  3. Sprinkle the spice blend evenly over the beef.
  4. Dollop the tomato paste and chunky salsa on top.
  5. Gently stir the mixture to coat the beef in the spices and sauce. Note: Don't worry if it's not fully broken up.
  6. Cover with the lid and set to HIGH for 4 hours or LOW for 7-8 hours.
  7. Avoid lifting the lid during the first 3 hours until the meat is tender and fragrant.
  8. Open the lid 30 minutes before serving and use a wooden spoon or masher to break up large chunks.
  9. Stir vigorously to incorporate the juices.
  10. Leave the lid off for the final 20 minutes until the sauce thickens and clings to the meat if it looks too liquid.
