Ingredients:

  • 2 lbs boneless, skinless chicken thighs, cut into 1-inch chunks
  • 1 cup full-fat sour cream
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup unsalted butter, melted
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp cracked black pepper
  • 1 sleeve (1.5 oz) Ritz crackers, crushed
  • 2 tbsp unsalted butter, melted
  • 1/2 cup grated Parmesan cheese

Instructions:

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9x13 inch baking dish with cooking spray or butter.
  2. Dice the chicken thighs into uniform 1-inch pieces.
  3. In a large bowl, whisk together the sour cream, cream of chicken soup, 1/2 cup melted butter, garlic powder, onion powder, salt, and pepper until smooth.
  4. Fold in the chicken chunks gently until completely coated in the sauce, then spread the mixture evenly into the prepared baking dish.
  5. In a small bowl, toss the crushed Ritz crackers with 2 tbsp melted butter and Parmesan cheese.
  6. Sprinkle the cracker mixture evenly over the chicken and bake for 60 minutes until the sauce is bubbling and the topping is deep mahogany gold.
  7. Let the casserole rest for 10 minutes before serving to allow the sauce to set.
