Ingredients:
- 1/2 cup soy sauce
- 1/4 cup brown sugar, packed
- 1 tbsp honey
- 1 tsp toasted sesame oil
- 1 tsp fresh ginger, grated
- 2 cloves garlic, minced
- 1 tbsp rice vinegar
- 1 lb large shrimp, peeled and deveined
- 2 cups fresh pineapple, cut into 1-inch cubes
- 1 red bell pepper, cut into 1-inch chunks
- 1 tbsp neutral oil
- sliced green onions
- toasted sesame seeds
Instructions:
- Whisk all marinade ingredients (soy sauce, brown sugar, honey, sesame oil, ginger, garlic, and rice vinegar) in a bowl until the sugar is fully dissolved.
- Pat the shrimp completely dry with a paper towel. Toss the shrimp in 1/4 of the prepared marinade and let them marinate for 15 to 30 minutes.
- Lightly coat pineapple cubes and bell pepper chunks in neutral oil.
- Thread ingredients onto skewers, alternating pineapple, shrimp, and pepper.
- Preheat grill to medium-high (approx 400°F / 200°C). Grill skewers for 2–3 minutes per side until shrimp are opaque and pineapple is charred.
- During the last 2 minutes of cooking, brush the remaining teriyaki marinade over the skewers until it bubbles and thickens into a glaze.
- Remove from heat when shrimp are curled into a 'C' shape and garnish with green onions and sesame seeds.
