Ingredients:

  • 1 lb (450g) ground turkey (93% lean)
  • 1/2 cup (60g) plain breadcrumbs
  • 1 large (50g) egg, lightly beaten
  • 1/4 cup (25g) grated Parmesan cheese
  • 2 cloves (6g) garlic, minced
  • 2 tbsp (8g) fresh parsley, finely chopped
  • 1 tsp (2g) dried oregano
  • 1/2 tsp (3g) onion powder
  • 1 tsp (6g) kosher salt
  • 1/2 tsp (1g) black pepper

Instructions:

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper so the Turkey Meatballs don't stick.
  2. In a large bowl, mix the breadcrumbs, Parmesan, garlic, parsley, oregano, onion powder, salt, and pepper.
  3. Add the beaten egg and the ground turkey to the spice mix.
  4. Gently fold the ingredients with your hands until just combined. Stop the moment the egg streaks vanish. Note: This prevents the rubbery texture
  5. Scoop 2 tbsp (30ml) of the mixture. Roll it into a ball about 1.5 inches (3.8cm) wide.
  6. Place them on the sheet with 1 inch (2.5cm) of space between each ball.
  7. Bake on the center rack for 18-22 minutes.
  8. Remove when the exterior is mahogany colored and the center hits 165°F (74°C). Note: USDA guidance puts the safe internal temperature at 165°F
