Ingredients:
- 1 lb (450g) ground turkey (93% lean)
- 1/2 cup (60g) plain breadcrumbs
- 1 large (50g) egg, lightly beaten
- 1/4 cup (25g) grated Parmesan cheese
- 2 cloves (6g) garlic, minced
- 2 tbsp (8g) fresh parsley, finely chopped
- 1 tsp (2g) dried oregano
- 1/2 tsp (3g) onion powder
- 1 tsp (6g) kosher salt
- 1/2 tsp (1g) black pepper
Instructions:
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper so the Turkey Meatballs don't stick.
- In a large bowl, mix the breadcrumbs, Parmesan, garlic, parsley, oregano, onion powder, salt, and pepper.
- Add the beaten egg and the ground turkey to the spice mix.
- Gently fold the ingredients with your hands until just combined. Stop the moment the egg streaks vanish. Note: This prevents the rubbery texture
- Scoop 2 tbsp (30ml) of the mixture. Roll it into a ball about 1.5 inches (3.8cm) wide.
- Place them on the sheet with 1 inch (2.5cm) of space between each ball.
- Bake on the center rack for 18-22 minutes.
- Remove when the exterior is mahogany colored and the center hits 165°F (74°C). Note: USDA guidance puts the safe internal temperature at 165°F
