Ingredients:

  • 1 lb (450g) lean ground turkey (93% lean)
  • 2 medium (450g) sweet potatoes, peeled and diced into 1/4-inch cubes
  • 1 medium (110g) yellow onion, finely diced
  • 3 cloves (15g) garlic, minced
  • 3 cups (90g) fresh baby spinach, packed
  • 1 red bell pepper (120g), diced
  • 1 tbsp (15ml) extra-virgin olive oil
  • 1 tsp (2g) smoked paprika
  • 1/2 tsp (1g) dried oregano
  • 1/2 tsp (3g) sea salt
  • 1/4 tsp (1g) cracked black pepper
  • 1 tbsp (15ml) fresh lime juice

Instructions:

  1. Dice the sweet potatoes into very small, uniform 1/4-inch cubes to ensure they soften at the same rate the turkey browns.
  2. Heat olive oil over medium-high heat. Add the ground turkey, breaking it apart with a spatula until seared. Stir in the diced onion and red bell pepper, sautéing for 3–4 minutes until onions are translucent. Add minced garlic and cook for 60 seconds.
  3. Stir in the diced sweet potatoes, smoked paprika, oregano, salt, and pepper. Reduce heat to medium, cover the skillet with a lid, and cook for 10–12 minutes, stirring occasionally until potatoes are tender.
  4. Remove the lid and fold in the fresh baby spinach, stirring for 1–2 minutes until just wilted. Remove from heat and drizzle with fresh lime juice before serving.
