Ingredients:
- 1 lb (450g) lean ground turkey (93% lean)
- 2 medium (450g) sweet potatoes, peeled and diced into 1/4-inch cubes
- 1 medium (110g) yellow onion, finely diced
- 3 cloves (15g) garlic, minced
- 3 cups (90g) fresh baby spinach, packed
- 1 red bell pepper (120g), diced
- 1 tbsp (15ml) extra-virgin olive oil
- 1 tsp (2g) smoked paprika
- 1/2 tsp (1g) dried oregano
- 1/2 tsp (3g) sea salt
- 1/4 tsp (1g) cracked black pepper
- 1 tbsp (15ml) fresh lime juice
Instructions:
- Dice the sweet potatoes into very small, uniform 1/4-inch cubes to ensure they soften at the same rate the turkey browns.
- Heat olive oil over medium-high heat. Add the ground turkey, breaking it apart with a spatula until seared. Stir in the diced onion and red bell pepper, sautéing for 3–4 minutes until onions are translucent. Add minced garlic and cook for 60 seconds.
- Stir in the diced sweet potatoes, smoked paprika, oregano, salt, and pepper. Reduce heat to medium, cover the skillet with a lid, and cook for 10–12 minutes, stirring occasionally until potatoes are tender.
- Remove the lid and fold in the fresh baby spinach, stirring for 1–2 minutes until just wilted. Remove from heat and drizzle with fresh lime juice before serving.
