- 1 lb jumbo shrimp, peeled and deveined
- 1 tbsp olive oil
- 3 tbsp extra virgin olive oil
- 2 tbsp fresh lemon juice
- 3 cloves garlic, minced
- 1 tsp smoked paprika
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1/4 tsp cayenne pepper
Instructions:
- Pat the jumbo shrimp completely dry with paper towels to ensure a proper sear.
- Optional: Thread 4-5 shrimp onto each skewer; if using wooden skewers, ensure they have soaked in water for at least 30 minutes.
- In a large bowl, whisk together the extra virgin olive oil, lemon juice, minced garlic, smoked paprika, salt, pepper, and cayenne pepper.
- Add the shrimp to the bowl and toss gently until evenly coated in the marinade.
- Let the shrimp rest in the marinade for 10-15 minutes.
- Preheat the grill or ridged grill pan to high heat and brush with 1 tbsp of olive oil.
- Sear the shrimp over high heat until they curl into a gentle 'C' shape for a perfect snap-tender texture.
