Ingredients:

  • 1 lb jumbo shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 3 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper

Instructions:

  1. Pat the jumbo shrimp completely dry with paper towels to ensure a proper sear.
  2. Optional: Thread 4-5 shrimp onto each skewer; if using wooden skewers, ensure they have soaked in water for at least 30 minutes.
  3. In a large bowl, whisk together the extra virgin olive oil, lemon juice, minced garlic, smoked paprika, salt, pepper, and cayenne pepper.
  4. Add the shrimp to the bowl and toss gently until evenly coated in the marinade.
  5. Let the shrimp rest in the marinade for 10-15 minutes.
  6. Preheat the grill or ridged grill pan to high heat and brush with 1 tbsp of olive oil.
  7. Sear the shrimp over high heat until they curl into a gentle 'C' shape for a perfect snap-tender texture.
