Ingredients:
- 1 head (2 lbs / 900g) cauliflower, cut into medium-sized florets
- 3 tbsp (45ml) extra virgin olive oil
- 3 tbsp (45ml) balsamic vinegar
- 1 tbsp (21g) honey
- 3 cloves (15g) garlic, minced
- 1/2 tsp (3g) salt
- 1/4 tsp (1g) black pepper
- 2 tbsp (10g) fresh parsley, chopped
Instructions:
- Preheat the oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
- Cut the cauliflower into uniform, bite-sized florets to ensure even cooking.
- In a large mixing bowl, whisk together the olive oil, balsamic vinegar, honey, minced garlic, salt, and black pepper.
- Add the cauliflower florets to the bowl and toss vigorously until every piece is evenly coated in the balsamic glaze.
- Spread the florets in a single layer on the prepared baking sheet to maximize airflow.
- Roast for 25 minutes, or until the cauliflower achieves a deep mahogany color and crispy edges.
- Remove from the oven and garnish with freshly chopped parsley before serving.
