Ingredients:

  • 1 head (2 lbs / 900g) cauliflower, cut into medium-sized florets
  • 3 tbsp (45ml) extra virgin olive oil
  • 3 tbsp (45ml) balsamic vinegar
  • 1 tbsp (21g) honey
  • 3 cloves (15g) garlic, minced
  • 1/2 tsp (3g) salt
  • 1/4 tsp (1g) black pepper
  • 2 tbsp (10g) fresh parsley, chopped

Instructions:

  1. Preheat the oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
  2. Cut the cauliflower into uniform, bite-sized florets to ensure even cooking.
  3. In a large mixing bowl, whisk together the olive oil, balsamic vinegar, honey, minced garlic, salt, and black pepper.
  4. Add the cauliflower florets to the bowl and toss vigorously until every piece is evenly coated in the balsamic glaze.
  5. Spread the florets in a single layer on the prepared baking sheet to maximize airflow.
  6. Roast for 25 minutes, or until the cauliflower achieves a deep mahogany color and crispy edges.
  7. Remove from the oven and garnish with freshly chopped parsley before serving.
